Chef's bites | An Imperial experience
TICKING ALL THE BOXES is the new Imperial
Hotel restaurant and bar in Bowral.
Situated on the site of the old Port O Call Hotel,
the restaurant and bar face out onto Bong Bong
Street where the sight of satis ed customers can
be seen by visitors as they enter the town. Modern,
yet cosy and welcoming the restaurant has been
drawing locals and visitors onto the balcony on hot
days, or into the warm ambience on cold days.
Chef Jamie Everingham is the brains behind the
simple, yet sincere food.
His dedication to cooking, the kitchen and his
customers is evident in the animated way he talks
about his menu and the dishes he has chosen to
Jamie is adamant that he did not want to ser ve
pretentious overworked food, and instead has
chosen to add some quirky slants to old favourites.
Perusing the menu you will nd a roasted duck
breast salad with an orange caramel dressing, a
pork cutlet with a crackling basket and a vanilla
panacotta with smoked blueberry sauce.
These simple variations on a theme are tempting
both to the eye and the palate. All meats are
sourced from local providores as are the fruit and
vegetables, hence the seasonal dishes on o er.
Everything is cooked or prepared in the kitchen
and there are plenty of gluten-free options.
The kids' menu alone is enough of a draw card
for families. Not the usual nugget and chips on
o er here -- instead roast chicken in a basket to
keep the little ones happy.
Jamie loves the visual impact his food has on
customers. Watching someone's eyes light up
when they see their food and ensuring that every
dish is well presented, nutritious and mouth-
watering is the key to the success of this chef.
Giving the public more than they expect is what
is making the Imperial Hotel Restaurant a great
place to sit back and watch the world go by. n
