"The notion of a boutique vineyard is there is a lot
of a person in the end product -- there is a lot of me
and there is a lot of the wine maker," he said.
"No two seasons are the same and in a boutique
vineyard the creation of each vintage is exciting,
because no two wines are the same from one year
to the next.
"Boutique wines take on the personality of the
season, the viticulturist and the winemaker -- that's
their beauty, these wines have a personality unlike
the more mass produced wines."
Mr Quirico said a variety of factors contributed to
success in the vineyard.
"I work with the soil, the vine and the fruit
itself -- site, soil, grape variety, trellising, canopy
management and pruning are all important factors
in the nal grape production," he said.
"The one thing we have no control over is the
weather, but we aim to work positively with the

"We can't grow all varieties well, as is the case in
any region, but the varieties suited to the area have
ultimately been excellent."
The Tertini Vineyard currently grows a successful
mix of seven grape varieties including Chardonnay,
Pinot noir, Cabernet Sauvignon, Merlot, Riesling and
two more unusual varieties of Arneis and Lagrein
that are most familiar in Italy.
The Blue Metal Vineyard varieties include Sauvignon
Blanc, Cabernet Sauvignon, Merlot, Petit Verdot,
Sangiovese and Pinot Gris.
Mr Quirico said Highlands vineyards were currently
heading into an exciting time in the annual growing
cycle with the onset of bud burst.
However, he said it could also be a trying time.
"Frosts at this point in the season can be incredibly
damaging so I have to take measures to reduce the
impact of any possible frosts," he said.
"This includes making sure the grass is mown and
the vines are kept weed-free to maintain air ow
